Sicilian chickpeas of the Pascià variety are an excellence of the Sicilian hinterland, appreciated for their size and their intense flavour. One of its most appreciated qualities is its excellent cooking resistance. After preparation, the Pasha remains intact, tasty and consistent ("not flaky"), but with a soft internal consistency.
This chickpea needs to be soaked overnight and long cooking times over medium heat, but despite the laborious process, the result will surprise you!
It has an intense and full-bodied flavour, which some define as "vegetable" or "rustic", making it tasty even simply seasoned with oil and salt.
