Pesto alla Carrettiera is a rich and tasty sauce, typically used to season spaghetti. Unlike Genoese pesto, its variations are many, but the key ingredients make it a concentration of strong flavors.
The name "alla Carrettiera" derives from the ancient Sicilian carters who, at the beginning of the 20th century, transported goods with their horse-drawn carts. These long journeys did not allow stops in the tavern or the use of fresh and easily perishable ingredients.
