The Pesto alla Trapanese was born, as the name suggests, in the Trapani area (western Sicily) and its history is closely linked to the city's port, a crucial point for trade in the Mediterranean.
Like Genoese pesto, Pesto alla Trapanese is a raw sauce. The ingredients are not cooked but pounded in a mortar to prevent the heat from altering their freshness and organoleptic properties. This cold processing makes it an ideal condiment for the Sicilian summer.
We recommend using "busiate trapanesi" as a type of pasta to season with this pesto.
